The Lycée Viticole de Beaune produces this wine from a 60-hectare plot of land facing due south. This very poor vineyard produces very fine and concentrated wines.
The vinification started in vats is continued in barrels (25% new barrels) over a period of six to nine months of aging depending on the vintages.
The white Beaune is characterized by a very beautiful minerality raised by a very good acidity and a good roundness. Very subtle and almost closed in their youth, they evolve slowly depending on the vintage with notes of cut hay, hazelnut and candied white fruit.
Of a golden yellow color with green reflections, the nose presents notes of white flowers and flint. The mouth is smooth on acacia honey punctuated with notes of lemon and toast. A warm and fruity vintage, this wine is particularly rich and slightly iodized aromas are perceptible on the finish.
This great Beaune wine can be tasted now, but will probably be more expressive in a few years. Its structure allows it to keep well. It will go very well with fish in sauces and white meats.
