The Hautes Côtes de Beaune red wines, with their rather dark color, are pleasant, supple, perky and fruity. Seductive by their freshness, they have a firm flavor enhanced by good acidity on discreet tannins. Light in structure, they evolve rapidly over 3 to 7 years depending on the vintage.
The Lycée Viticole de Beaune produces this wine from 2 plots: the first on the experimental site of Mont Battois, in the town of Savigny les Beaune, for a surface area of 2.58 ha Pinot noir clones and the second on the commune of Bouze les Beaune on 1.08 ha.
The vineyard of Mont Battois is established on a skeletal soil of the brown clay-limestone type, superficial and stony with a slight slope of 3 to 5%, hence an east-south-east orientation. The situation at the top of the coast explains the precocity and the quality of this sector for this appellation.
Vinification is done with a short maceration of 6 to 8 days. The pigeages are very limited to have a balanced, supple and fresh wine. The aging is done in part in vats and the other in barrels for a more or less important part depending on the years, over a period of six to nine months
